Honduran coffees are a mainstay of the specialty world. Clean, balanced and chocolatey; there's no surprise many roasters consistently have them within their offerings. This coffee, from Yosedis Sagastume of Finca La Lomas, leans into this character and provides even more. We think this coffee is excellent, with all of the positive attributes of traditional Honduran coffee but with an impressive honey fermentation that adds a tonne of fruitiness and complexity to the cup.

This coffee is a Pacas varietal, which is a natural mutation of the bourbon plant and is common in Honduras. At the roastery, we have a preference for bourbon and it's children especially when these coffees have undergone more intense fermentation. No surprise here then, this coffee jumps off the cupping table with great acidity, integration and a fruitiness you can't miss.
